KNOW YOUR FOOD: Papaya
Papaya is a tropical fruit and it consist of two varieties; Hawaiian and Mexican. The Hawaiian varieties are those papayas that are usually found in the supermarkets. Mexican papayas are bigger and have a less intense flavour than the Hawaiian papayas.
The best way to determine the ripeness of papaya is the colour. Choose papayas which have a bigger portion of yellow to green colour. The greener the papaya is, the less ripe it is. The unripe papaya is usually used in Southeast Asian cooking such as in curries, stews and salads.
